Recipe of the Week: Baked Fish Tacos

Who knew it was so easy to make restaurant-style fish tacos at home? Shelterrific won our hearts (and our tummies) with this great recipe!  

Ingredients:
3-4 white thin white fish filets of your choosing, such as tilapia
1/2 cup flour
2 eggs
salt & pepper
Tabasco, sriracha, or any red pepper sauce
1 cup panko or crushed tortilla chips
lime juice (optional)
tortillas thinly-sliced green cabbage, or lettuce tossed with a bit of lime juice and salt
cilantro
sour cream cheese  

How to Make It:
1. Preheat oven to 350. Cover a cookie sheet with tin foil and spray with cooking oil. If you have time, marinate the fish in a zip-top bag with a few splashes of lime juice for up to 4 hours. Dry filets and cut into strips 1″ wide and salt and pepper both sides.

2. Put each of the flour, eggs, and panko crumbs each in separate shallow bowls, and add a 2 pinches of salt & pepper to each. Add a few big dashes hot pepper sauce to the eggs, and mix well with a fork. Next, dredge fish first in flour, then egg, then crumbs, and pat on all sides. Place on prepared baking sheet. Bake for 15 minutes, flipping half way through.

3. Add cabbage, cilantro, sour cream, cheese, or other toppings and serve on tortillas.
