Recipe of the Week: Vanilla Pudding Chocolate Chip Cookies

This week's mouthwatering creation comes from Siggy Spice. Even if you have a chocolate chip cookie recipe you like (or you just use the one on the back of the chocolate chip bag), this soft and chewy variation will win your heart--and your taste buds. And, as Siggy says, "Since it is half the butter normally called for, you can eat twice as many right?!" I know I did!

Ingredients
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) butter, softened
1/4 cup granulated white sugar
3/4 cup packed brown sugar
1 (3.4 oz) box vanilla instant pudding
1 teaspoon vanilla extract
2 large eggs
2 cups chocolate chips

How to Make It
1. Preheat the oven to 375ยบ.
2. In a small bowl, combine flour, baking soda, and salt. In a separate large mixing bowl, beat together butter, granulated sugar, brown sugar, and vanilla extract until the batter is creamy. Add in the pudding mix.
3. Add the eggs, one at a time, beating the batter well after each addition. Then gradually beat in the flour mixture. Stir in the chocolate chips.
4. Scoop out rounded tablespoons of dough and place 2 inches apart on ungreased baking sheets.
5. Bake until golden brown, about 8-10 minutes. Cool on the baking sheets for 2 minutes and then remove the cookies to wire racks to cool completely.
