We're excited to be launching our Recipe of the Week feature this week! This week's yummy offering comes from Dorene Marsik of Vancouver, WA. She says, "We were a family of 5 and my Mom made this often when we were growing up. It is economical and we all loved it. To this day, we all still fix it as adults as it is a feel-good meal. This dish is even better the next day as it allows the flavors to mix and enhance. When I take it in my lunch to work, co-workers always want some since it smells so good when I heat it up to eat."
Thanks Dorene! Here is the recipe:
Ingredients
1 pound ground beef
2 cans Campbell's tomato soup
2 cans green beans (any style)
1/2 teaspoon salt (optional)
Left-over mashed potatoes (or make enough to cover the casserole top)
How to Make It
1. Preheat oven to 350ยบ.
2. Place ground beef in skillet over medium heat and cook, stirring, until browned. Drain grease.
3. Add soup (do not add water), and mix in. Drain green beans and add to mixture.
4. Pour mixture in quart-sized casserole dish and top with mashed potatoes.
5. Place in oven and cook for 30 minutes
